Burrowing Owl New Year’s Dinner

as promised, here’s the menu we’ve put together for the upcoming

Burrowing Owl New Year’s dinner…

To begin, a canapé reception with the 2011 Pinot Gris,  then on to dinner…

lobster salad

Lobster “Cocktail”- 

PEI lobster, wasabi cocktail sauce, coconut lime royale, fresh heart of palm

pairing with 2009 Chardonnay

 Bison Carpaccio –

bourbon foie gras foam, pickled mustard seeds, fennel and radish salad

pairing with 2009 Pinot Noir

Duck Confit Raviolo –

House-made Fraser Valley bacon , Yarrow Meadows duck, candied chestnuts, truffled duck broth

pairing with 2009 Athene

Queen Charlotte Sablefish –

 fingerling potato, bluefoot mushrooms, boretane onions and smoked onion soubise

pairing with 2008 Meritage

Rhubarb Blondie –

white chocolate brownie, rhubarb compote, crème fraiche ice cream

pairing with Coruja Port

cheeses

 finished with a Local Artisanal Cheese Plate
